Our Carrot Walnut bread is the perfect afterschool snack and would be a welcome addition to a lunchbox the following day.
Carrot Walnut Bread
Serves 8 to 12
Prep Time: 20 minutes
Cook Time: 55 minutes
2 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
4 large eggs
2 cups coconut sugar
1 cup olive oil, plus more for greasing
1 cup orange carrots, shredded
1 cup purple carrots, shredded
1 cup walnuts, roasted, chopped
½ cup golden raisins
- Preheat oven to 350ºF.
- In a mixing bowl, whisk flour, baking powder, baking soda, cinnamon and salt until fully incorporated.
- In a separate mixing bowl, combine eggs, coconut sugar and oil. Mix in carrots, walnuts and golden raisins. Mix in flour mixture until incorporated, transfer to a greased, fluted cake pan and bake all the way through, 55 minutes to 65 minutes.
- Let cake cool for 15 minutes, flip onto a wire rack and cool completely. Slice and serve.
