How To Use Your End of Summer Produce

Fall is here but we still have time to use up the last of our summer produce. Some of our favorite late summer produce are tomatoes, zucchini, and eggplant, and the most delightful way to enjoy these hearty fruits and vegetables is in the dish ratatouille.
Ratatouille is both a classic Disney movie and a classic Provençal dish consisting of summer vegetables like eggplant, onions, peppers, tomatoes and zucchini that are always available in local gardens. These gemstone colored vegetables are bathed in olive oil and roasted separately, then all together until they become a soft and sumptuous summer stew.
Yes, there is a bit of knife work to accomplish this French dish, but think of it as a way to hone your skills and break out the sharpening block! We know you won’t be disappointed with our favorite recipe from the New York Times.
