The Culinistas Game Day Chili
Football season is here. If you are a college football fan, NFL supporter, or just roll your eyes at those fantasy leagues, we have the perfect game day meal for you.
Serves 4 to 6
Prep Time: 15 minutes
Cook Time: 1 hour 15 minutes
1 can (15 ounces) navy beans
1/4 cup olive oil
1 pound ground beef
1 yellow onion, finely chopped
2 poblano, stemmed, seeded, finely chopped
1 small celery root, peeled, diced
2 carrots, peeled, diced
1 1/2 tsp cumin, coarsely chopped
1 tsp onion powder
½ tsp allspice, ground
¼ tsp cayenne
1 cup diced tomatoes
2 cups water
Salt & freshly ground black pepper, to taste
- In a high speed blender, add ⅓ cup of the beans and puree smooth. Set aside.
- In a dutch oven, heat oil and sear ground beef, 8 to 10 minutes. Transfer the beef to a plate.
- Sweat onion and poblanos in the pan until translucent, 8 to 10 minutes. Add celery root and carrots and cook until slightly soft, 10 to 12 minutes. Add back the ground beef and season with cumin, onion powder, allspice, cayenne, salt and pepper. Cook until the spices are fragrant, 1 minute.
- Add the bean puree and whole beans, tomatoes and water and bring the mixture to a boil. Reduce the heat and simmer for 45 minutes to 1 hour.
