 and everything is set: the menu, the decor, and the guest list. But, what about dessert? For some, dessert is an afterthought, while others believe in saving the best for last. We believe that it doesn’t have to be sugary, but something to close the meal marks a gathering as special.

How do you pick the right dessert to end your night? Understanding how to pair dessert with the rest of a meal is a skill—but it’s easy to master with a few guidelines in mind. Read on to learn about the five factors to consider when choosing the ideal dessert, so you never have to stress about the final course.

Single Origin

When dishes come from the same culinary traditions, they often share common ingredients, flavor profiles, and cooking techniques. This throughline creates a balanced meal in which each dish complements the others. For example, if you’re serving a French Chicken Paillard as your main course, return to another regional classic for dessert, like our Apricot Tarte Tatin, which showcases all the elegance of French cuisine. Both have a rich undertone, but the Tarte Tatin’s mild flavor profile balances the chicken’s acidity.

Balance

If the main meal is hearty or rich like a meaty stew or creamy pasta, a lighter dessert may be the right choice. If serving a lighter meal like our Za’atar Dusted Salmon with Cucumber Salad, you’ll have room for our creamy, decadent Burnt Basque Cheesecake. Aim for your guests to feel satisfied when they leave and refreshed and healthy when they wake up the next day.

Flavor Throughlines

Citrus, spices, and herbs make for great throughlines to a meal because they play well with dishes that are both savory and sweet. If your meal features citrus in the form of a salad dressing or marinade, tie a bow on it with a similarly bright dessert. If your meal includes warm or spicy flavors like our Spiced Lamb with Couscous, look to a dessert with adjacent flavors like our fluffy Coconut Chai Cake, made with plenty of cinnamon and nutmeg. The complementary spices are a reminder of the deliciousness you just enjoyed, and a satisfying close to the night.

Kitchen Efficiency

Think like a chef. Whenever they can, chefs create menus with kitchen efficiency in mind; so, if the main dish is a hearty braise that requires the oven to be at a low temperature for a long period of time, accompaniments that use the stovetop or no cooking at all will prevent traffic jams at the range. This technique can be applied in many ways: Pavlova in an oven that can’t be opened? Plan to use the grill for dinner. Two different types of roasted root veggies as sides? Whipped cream and berries for dessert. Another great kitchen efficiency technique is planning a dessert that can be made ahead. Trifle-style desserts, like our Raspberry Tiramisu, is one of these, or cookies, whose dough can be made up to a week before and then portioned in advance, so that you can pop a baking sheet in the oven for 8-10 minutes, then produce a plate of cookies as if by magic.

Sustainability

Chefs are always thinking of ways to use entire ingredients root to flower, rind to seed, or to reuse ingredients that would otherwise be discarded. Even better, they choose dishes because of ingredients from other dishes that they know will need to be used up. Our Vegetable Aioli, for example, uses egg yolks. , hosting at home is not hard; it takes guidance and a plan, which you will have when you finish reading this article!

A few key steps for planning, organizing, and moving through a gathering will help you lead with hospitality, have fun, and guide the flow. With a plan, you won’t ever feel lost at your own party.

Identify the Purpose

A theme—whether culinary-driven, celebratory, or otherwise—lightens the logistical load. We love Priya Parker’s book, 

 and we stand by her suggestion of themes for gatherings of all kinds. If there isn’t an obvious purpose, like a birthday, consider the small occurrences in life that can be beautiful and appreciated when memorialized: seasons shifting, testing a new grill, or a special night to hear about a family member’s vacation and see photos. Rely on this purpose to structure the flow of the night, your menu, the decor, and your party games (Play! Why not?).

A friend from college just moved to your city, and you want to host a gathering to introduce her to your friend group here. You decide on a Mexican-inspired menu, recalling all the amazing Mexican food you both ate in your college town. Because you went to school on the West Coast, you decorate with poppies and bring out the serving bowl you bought on the spring break trip you went on together. After the meal, you play a couple rounds of

Dinner Party Equation

This equation will quickly become your trusted hosting formula. When deciding on a menu, follow this format:

To start, you’ll want something that can come together either easily or beautifully or in advance (or, all three) to keep yourself free to welcome your guests with a hug, a drink, or to take their coats (or, again, all three). Think build-your-own spreads like charcuterie boards, three ingredient canapés, or a dip that will hold up in the fridge.

The four main dishes should encompass a salad, protein, grain or starch, and a veggie side. Variety is key to ensuring there’s enough to go around and that your guests are satiated, but too much variety can be an overwhelming amount of flavor and choice. Guests overeating is not the goal. Keep your menu balanced by tethering it to flavor profiles that complement each other. If it grows together, it goes together. It’s no accident that fall salads headline earthy Brussels sprouts and tart apples, while winter’s feature citrus supremes and bitter radicchio. Eat seasonally, match dishes by region or culture, or support one bold dish with other simpler dishes.

Think of dessert as an extension of the meal, remembering the suggestions above. If your menu employs lemon throughout the cooking, you may want to keep dessert in the family with a lemony tart or zesty cookies. Alternatively, if your main menu is dairy-forward, consider passing on the ice cream and baking a berry galette or spiced cake in its place. Remember to gather your guests’ dietary restrictions before finalizing your menu. A good rule is to make sure two of your main dishes will be suitable, that a single ingredient snack following your guest’s requirements is on hand (like nuts, pretzels, crudité, etc), and that there’s a little fruit or cheese for dessert, depending on the needs.

We're All Family Here

Your guests may want to help. They likely know the stressors hosting brings and appreciate your hospitality. This starts with, “What can I bring?” Give your guests who ask straightforward, 101 assignments like fresh bread, pistachios, berries, or espresso beans. Single ingredients that you may not have time or have forgotten to get but that will add something special to the menu. Maybe a box of Maldon salt! Guests will feel useful and like an integral part of the night. Creating a hivemind camaraderie can start here. Another way to include your guests before they step through your front door is to ask them to add to a playlist. Your guests will take pride in knowing they helped set the tone, and it’ll make for great interstitial conversation throughout the night.

During your gathering, if anyone wants to help, assign the task of moving people to the snacks or to the dinner table so you can focus on moving the food. Assign someone to fill water pitchers. Guests succeed with tasks that do not require your oversight or for you to answer questions (such as “Where did you say you keep your box grater?”).

Between the meal and dessert, rather than accept help clearing dishes, which often disrupts the night, assign someone to help guide the conversation while you clear. Ask a friend to tell a specific story, ask the group to come up with their favorite movie of the season, or play a game (see 

Prep is Best

Here are the do-ahead tasks we never skip:

Assess your equipment to be sure you have everything you need to execute. If you’re doing the cooking yourself, map out your stovetop and oven use to make sure you won’t end up with a last-minute traffic jam. If you’re working with a Culinista chef, make sure you have everything on our 

Count your plates, flatware, and glasses to serve your guests. Do this a few days before in case you need to borrow (see: “What can I bring?” above). Plan out your serving vessels, too, so that you know where your dishes will be going once prepped.

Batch a cocktail or two a day ahead, slice citrus, and buy sparkling water and tonic.

If you’re handling the food, make anything that can be done in advance like a casserole or large-format dessert the night before or early in the morning. Do any prep work in advance that won’t wilt, discolor, or go bad (e.g. chopping, slicing, blanching, blending sauces).

Mise en Place

On the subject of prep work, the restaurant philosophy of mise en place (everything in its place) is a mantra among Culinista chefs. Once your do-ahead prep is done, set up your equipment and ingredients for day-of cooking. That means washing and chopping produce, making sauces or marinades, and even portioning out ingredients so they’re ready to go. This will save you time when you’re cooking and naturally encourage you to clean as you go, which is what will make you feel in control, calm, and on top of the evening.

Set the Tone and the Zones

Walk through the night in your home. Arrange your space to create the movement and momentum you envision. Three hours at the table can make any guest, and their host, antsy, so when it comes to pacing, consider the 30/60/90 rule: spend 30 minutes enjoying pre-dinner snacks and cocktails, 60 minutes at the table, and 90 minutes for dessert, games, and less structured chatter either at the table with the seating rearranged, in another room, on the patio, or around a coffee table.

Take Time to Toast

Before you dive into the feast, between standing cocktails and seated dinner, remember to toast to your shared purpose for gathering. Tell your guests why they are here, maybe what they will be eating, and perhaps what will be asked of them (reiterating the purpose). Then let yourself be present and pay full attention to your guests. A gathering you can actually be a part of? That’s the greatest party trick of all.

Games are especially great for introverts who might not otherwise join the conversation. Different games work for different types of gatherings and personalities. This is your gathering, and your guests are relying on you to run it. When it’s time to end the night, you need to be the one to call it. Paella is one of those dishes that brings people together. Because of its large format and flexible ingredient list, the traditional Spanish dish is synonymous with communal celebration. And even though paella is an extravagant-looking dish, it is possible to conquer in your home kitchen with the right plan and ingredients. Here’s how to make paella your next reason to come together.

The Pan

 is large, shallow, and made of very thin metal, which allows rice to cook evenly and form a crust—known as socarrat—on the bottom. Paella pans function as both cooking and serving vessels, so the two handles on either side help it get to the table.

If you don’t have a paella pan, your largest 

 will work, but your socarrat will likely take longer to cook and may not be as crispy. Whichever pan you choose, it should be big enough to hold all of the ingredients and have enough surface area for them to spread across one layer.

Type of Rice

The most common rice for making paella is bomba rice. Bomba is the MVP of paella rice because it is a short grain with a high starch content, allowing it to absorb a significant amount of liquid while maintaining its structure. This characteristic helps the rice to cook evenly and release its starch, creating a creamy texture and forming a crispy and flavorful socarrat at the bottom of the pan. Socarrat is a delicacy, prized for its crispy texture and nutty flavor. It is formed by evenly cooking rice at a high heat and creating a layer of caramelized rice at the bottom of the pan. If Bomba rice is unavailable, you can use other short-grain rice such as Arborio or Calasparra, though the resulting texture may be slightly different.

This Italian dinner party menu will conjure rolling hills lined with cypress trees, terracotta roofs parallel to cobblestone streets, overflowing carafes of table wine (but better, because it’s from your reserve), pizza, pasta and more pasta.

Roman Pizzette

Meet pizzette, the fast-casual snack of Rome that is the ideal kickoff dish at your Italian dinner party because it is flavorful, three ingredients, easy to prep in advance, light enough not to ruin one’s appetite for the meal, but will absorb a G&T. Our pizzettes are 2-3 bites each of tomato-sauced, marinated artichokes on a mini dough round. We use a Single Ingredient Multiple Ways by mixing the seasoned artichoke brine into tomato paste for a quick, perfectly seasoned sauce, and we use the tart hearts as a topping. With flaky dough, it is a Flavor Trifecta. We love sliced mozzarella bocconcini, anchovies, and cubed pancetta as extra toppers if you want to prepare a variety.

Arugula & Pickled Shallots

Our insalata mista is a billowing bowl of crisp greens adorned with jewel-toned shallots that, in between bites of hearty pasta and piccata, cleanses the palate by offering an acidic punch. The shallots are Quick Pickled in red wine vinegar and sweetened with honey and the mista? Peppery arugula and sharp radicchio offset with sweetness. A meal like this needs a salad, so keep it simple with this one.


Veal Piccata

Often found on restaurant menus in Italy as Scaloppine di Vitello, Veal Piccata consists of thinly sliced, pounded, and lightly breaded pieces of veal. These cutlets get gently sautéed in olive oil, rendering a golden-brown finished product with locked-in juices—an unbeatable combination that guarantees a tender cutlet every time. White wine, lemon juice, and capers get added post-sauté, then reduced until thickened and spooned on top of the veal.

Bucatini all’Amatriciana

Bucatini all'Amatriciana is a full-of-flavor Italian classic, both simple and fun to eat. The sauce is tomato-based and made with guanciale, a cured pork cheek, that adds a smoky flavor. Just like the base of many prized Italian dishes, onion and roasted garlic start the dish with an Aromatic Foundation. And while Bucatini all’Amatriciana is finished with freshly grated parmesan, the rind of the cheese is first cut away and simmered in the sauce to impart its super savory flavor profile throughout. No rules on how much cheese to add on top; the limit does not exist!

Cacio e Pepe Broccolini

Cacio e Pepe is a classic dish from the Lazio region of Italy (the same as Bucatini all'Amatriciana); this preparation riffs on the classic. We roast crowns of broccolini until tender and slightly crisped, then toss them with citrus, pecorino, toasted pine nuts, cracked pink peppercorns, and freshly ground black pepper. We make our cacio e pepe sauce green by using broc stems puréed with lemon juice, olive oil, and pecorino.

Coffee Hazelnut Trifle

The finale dish for this ultimate Italian dinner party is a combination of two beloved Italian sweets: Tiramisu and Maritozzi. For this Classics Redone, thick slices of brioche are toasted until golden then combined with an espresso syrup made from sugar, cocoa powder, and espresso. The espresso-soaked brioche is then layered with mocha mascarpone (a combination of mascarpone cheese, sugar, cocoa powder, and more espresso) and a simple whipped cream. The three components are layered in a trifle dish, dusted with cocoa powder, and garnished with deeply toasted hazelnuts.
