What’s a great movie without the perfect ending? We’d argue the same model is true for dinner: No great meal is complete without the perfect something-sweet for dessert.
Our Oscar-worthy Blueberry Chamomile Parfait isn’t just dessert-material though. This dish is the parfait way to start your morning as well. We don’t want to give anything away but the sumac in the coconut-walnut granola might just steal the show.
Pro-tips: If you can’t find dried ground chamomile tea, purchase dried whole flower chamomile tea & grind with a spice grinder. Or, brew a strong cup of tea & boil ½ cup with the compote.
Blueberry Chamomile Parfait

Cook Time 35 mins
Serves 2 to 4
¼ cup coconut, finely chopped
¼ cup walnuts, finely chopped
¼ cup + 2 TB honey, divided
2 TB olive oil
½ tsp sumac
2 cups blueberries, halved
½ tsp chamomile, ground
½ tsp solstice blend
¼ tsp allspice, ground
2 cups whole milk Greek yogurt
Salt, to taste
1. Preheat oven to 350ºF.
2. Make the granola: On a parchment-lined baking sheet, toss coconut & walnuts with 3 TB honey, oil & sumac; season with salt. Bake until golden brown, 25-30 mins, stirring every 10 mins to avoid burning. Cool.
3. Make the compote: In a medium saucepan, bring blueberries, remaining 3 TB honey, 2-3 TB water, chamomile, solstice blend & allspice to a boil, breaking up the blueberries; reduce heat & simmer, 10-15 mins. Cool.
4. In small bowls, layer yogurt, blueberry compote & granola, repeating layers until vessels are full. Garnish with granola & sumac.
